Baking Fundamentals: 4 hrs
In this 4-hour class you will learn the skills necessary to bake cakes from scratch. Students will bake several varieties of cake using different ingredients in order to learn how certain components interact and change recipes. We will cover creaming method and egg foam method. You will learn proper scaling, mixing, baking and cooling techniques. In addition, we will discuss basic substitutions for your favorite recipes (butter vs. shortening, whole milk vs. low fat, etc.). By the end of the class you will understand the difference between whole-wheat flour, bread flour, cake flour, and all-purpose flour and superfine sugar vs. granulated and brown sugars. Knowing when and where to use baking powder vs. baking soda will also be covered as well as how to tell if a cake is properly baked and the importance of and techniques for leveling a cake. The Basics of Cake Filings: 4 hrs
Learn the magic behind the success of our cakes! In this demo class, the instructor will show, step by step, the preparation of different cake fillings such as lemon and orange curd, mousse, ganache, custard, pastry cream, and buttercream (and it’s variations). Cost: $150

Filling and Icing a Layer Cake: 3 hrs
In this hands-on class you will learn the techniques you need to be a pro at filling and icing a layer cake. We will offer baking tips and cover de-panning, leveling, and de-crumbing a cake. You will learn how to properly fill a cake, dam for soft fillings, crumb ice, and methods for final icing sure to make even Martha Stuart jealous. As time permits we will discuss the fundamentals of icing recipes, learn to pipe a basic border and demo the steps involved in preparing a mousseline buttercream. All edible materials and recipes will be provided. You will also get to take your cake home and eat it too! Cost: $120

Beginning Rolled Fondant on Cakes: 4 hrs
In this hands-on class, students will be shown how to make a basic rolled fondant. The instructor will discuss the difference between using commercial grade and hand-made sugar paste. Each student will get to cover their own cake using rolled fondant. Details will include how to color, marble and texture sugar paste. As time permits we will also discuss and show you quick and easy shortcuts to embossing, draping and other fabric effects using sugar paste.

Intermediate Rolled Fondant/
Side Design Class: 4 hrs
This is a class not to be missed for anyone interested in becoming a cake decorator. Each student will learn multiple techniques to take cakes from drab to stunning. Embossing, crimping, bordering, fabric effects, side designs and stenciling are among the elements you will be taught in this hands-on class. As time permits we will talk about brush embroidery and marquetry techniques. Cost: $150

Advanced Fine Arts Cake Designs: 4 hrs

Taught by our resident artist and decorator, Beth, this class will be an eye opening experience for all cake decorators and artists alike. Learn to sketch and hand paint (with edible paint) on cakes using various watercolor painting techniques. Cost: $150

In section two Beth will teach you how to breathe new life into you cake designs with edible print making and silk-screening on cakes. This class will thrill both the novice and the professional decorator. Cost: $150

Beginning Chocolate Class: 4 hrs
Anyone interested in taking their edible artistry to a new level will love this class. Students will be shown how to make and properly handle modeling chocolate (candy clay), a delicious alternative medium to rolled fondant. Each student will leave with a hand-molded and life-like chocolate flower that will amaze friends and family. All materials will be provided. Cost: $150

Advanced Chocolate Clay Class: 4 hrs
In this class Chris will teach you the techniques necessary to sculpt and model chocolate clay without using molds. You will learn how to create armatures to give your sculpture life-like movement. Techniques for smoothing the chocolate as you work will also be taught. This class is a must for all those aspiring cake artists who wish to master proportions and sculpt the human form in edible format. Cost: $150
